I’m obsessed with this zucchini, ricotta, and mint fusilli—refreshing for the summer, super easy to make, and delicious!

Ingredients

fusilli pasta

ricotta cheese

zucchini squash

parmigiano reggiano cheese

mint leaves

Instructions

Step 1

Sauté zucchini squash in olive oil, seasoning with some salt and pepper.

Step 2

Cook pasta in salted water.

Step 3

In a food processor or blender, blend zucchini with ricotta, parmigiano reggiano cheeses, and mint leaves.

Step 4

Add 1-2 spoons of pasta water to make it creamy and blend again.

Step 5

Drain pasta, add sauce, and serve lukewarm 😋
