Yogurt pancakes are the ultimate fluffy brunch food. This recipe puts a unique twist on the classic American breakfast by using Greek yogurt for extra softness and a distinct acidic taste that pairs perfectly with sweet maple syrup.

Ingredients

2 large eggs separated

1 1/2 tablespoons granulated sugar

1 1/2 cup greek yogurt

1/4 teaspoon fine sea salt

1/2 teaspoon baking powder

1 cup allpurpose flour

Instructions

Step 1

Whisk together flour, baking powder, sugar, and salt in a small bowl.

Step 2

Combine yogurt and egg yolks in a separate, larger mixing bowl. add dry ingredients, whisking until smooth.

Step 3

Beat the egg whites with a hand or stand mixer until stiff. fold into the batter. cover and let rest for 30 minutes up to 1 hour.

Step 4

Melt some butter in a heated pan to coat the surface. use a 1/3-cup measure to pour batter onto the hot griddle.

Step 5

Cook pancakes for about 3 or 4 minutes. flip and cook another 2 to 3 minutes, until golden brown. repeat with the remaining pancakes.

Step 6

Enjoy with maple syrup, jam, nutella, or your favorite spread!
