Welcome to my series: NOT a Sad Salad where I make... not sad salads. Rather, happy salads that taste great, make you feel good, are simple, and have a yummy homemade dressing to them! This is a vegan Caesar dressing that is punchy and delicious! You’re going to want to SAVE this recipe for later

Ingredients

1 hyphen 3 tbsp water to thin depending on desired consistency

salt/pepper to taste

kale

4 garlic cloves minced

2 hyphen 3 tsp caper brine juice juice in caper jar

juice of 1 lemon

potatoes

spinach

avocado

1 tsp mustard

walnuts

1/4 cup hummus

chickpeas

2 tsp capers chopped

zest of 1/2 lemon

bell pepper

1 hyphen 2 tbsp maple syrup

Instructions

Step 1

-chop your potatoes and rinse a can of chickpeas and coat with salt/pepper/avocado oil then put them in the air fryer for 15 min at 400f, shaking 1/2 way through

Step 2

-mix/shake all dressing ingredients together.

Step 3

-assemble your salad and pour the dressing over, enjoy!
