Buffalo Cauliflower Tacos

Buckle up for this 30 minute vegan dinner that is the perfect mixture of crunchy, spicy, creamy, and refreshing!

Ingredients

1 large head of cauliflower

2 limes juiced

⅔ cup water

½ cabbage

½ red onion

salt and pepper to taste

¾ cup buffalo sauce

1 cup cornstarch

2 tbsp water to thin

cilantro

1 tbsp maple syrup

tortillas riseandpuff are great 4 ingredient tortillas

¼ cup tahini

Instructions

Step 1

- cut the cauliflower into bits. combine the cornstarch, water, and salt and pepper in a bowl until the cornstarch is fully incorporated. coat the cauliflower in the cornstarch mixture then put in the airfryer at 400f for 8 minutes

Step 2

-take the cauliflower out and coat in a bowl with buffalo sauce. place the coated cauliflower in the airfryer for another 9 minutes at 400f.

Step 3

-meanwhile, cut your cabbage, red onion, and cilantro and prep your lime tahini sauce. whisk or shake together the tahini, maple syrup, lime juice, and water.

Step 4

-once the cauliflower is done, warm your tortillas then assemble your tacos with the cauliflower, cabbage, red onion, cilantro, and tahini lime sauce.
