WHOLE ROASTED CAULIFLOWER  - with a garlicky tahini dressing

This is seriously my new favorite dinner recipe ! It’s so simple to make and the flavors are absolutely insane SAVE this recipe, I promise it is going to be your new favorite too.

Ingredients

1/4 cup tahini

sea salt paprika

1 garlic clove grated

1 whole cauliflower chop off some of the stem

cumin

garlic powder

avocado oil

3/4 cup water adding more as needed to thin out the sauce

sea salt to taste

3 tsp lemon juice

Instructions

Step 1

Remove part of the stem of the cauliflower. i like to leave the leafs on because it adds a super charred + crunchy taste.

Step 2

Place in a pot of boiling water for 5-7 min depending on how large your cauliflower is. test with a knife, it should go through easily, but not super soft. remove and place on baking sheet

Step 3

Let steam dry on the sheet and preheat the oven to 450 degrees f.

Step 4

Once it’s cooled enough to handle, drizzle the avocado oil + spices and give it a good massage to get all the flavors in there.

Step 5

Bake for 45min.

Step 6

While baking, make your garlicky tahini dressing by combining all the ingredients to a bowl and mixing until nice and smooth + creamy.

I served it over a bed of green kale dressed with evoo, lemon juice & flaky sea salt
