Stuffed hatch green chiles

when i say i sprinted to trader joes once i heard their hatch green chiles were back... i’ve been waiting for them to come back in season this whole summer and have been DYING to try out this recipe idea. i love these peppers because they are the perfect balance between spicy and sweet. this is a vegetarian option, but you can easily add meat for a more protein packed meal.

Ingredients

1 cup tomatoes i quartered cherry tomatoes

1 red onion diced

2 tbsp olive oil

1/2 cup cotija cheese

1 bag roasted corn i used frozen

½ of a lime juiced

3 tsp cilantro divided

½ cup greek yogurt

6 hatch chiles

1 tsp cayenne

1 tsp chili lime seasoning

Instructions

Step 1

Place hatch chiles on a baking sheet and broil for 3-5 until chiles are charred, remove and allow to cool

Step 2

Place olive oil in a large skillet along with onions and sautee for 3-5 minutes, add in corn and heat through.

Step 3

Sprinkle chili lime seasoning and cayenne pepper, then stir. take off heat.

Step 4

In a large bowl mix greek yogurt, lime juice and 1 ½ tsp of cilantro until combined.

Step 5

Carefully slice open hatch chiles. remove the seeds to avoid the heat or keep to retain the heat.

Step 6

Stuff with corn mixture, top with tomato, cotija and cilantro.

Step 7

Place in oven for 10-15 minutes until cheese is melted

Step 8

Drizzle the yogurt lime mixture over hatch chiles along with the remaining fresh cilantro and enjoy
