i have been dying to try this recipe ever since it went viral on tiktok and all i have to say is that there is a reason that she was able to eat this salad for lunch everyday for 10 years on the set of friends AND never get tired of it. it’s insanely refreshing, i am literally going to sprint back to tjs today to make meal prep more of it for the rest of the week. it’s so refreshing, and a great staple meal now that the weather is getting warmer. I added sun-dried tomatoes and kalamata olives to my salad even though they aren’t listed in the original recipe and it turned out amazing.

Ingredients

1/3 cup chopped red onion

1/2 cup chopped parsley

1/2 cup crumbled feta

2.5 cups cooked bulgur wheat i used quinoa

salt & pepper to taste

1/4 cup extra virgin olive oil

1 can chickpeas drained and rinsed can also be baked in the oven or airfried for some extra crunch

juice of 1 lemon

1/4 cup kalamata olives

1/2 cup chopped mint

1/2 cup chopped pistachios

2 hyphen 3 chopped small cucumber

1/4 cup sundried tomatoes

Instructions

Step 1

Start cooking your quinoa or grain of choice on the stovetop

Step 2

Finely dice all of your herbs and vegetables, then add them to a bowl with the cooked grain, and chickpeas

Step 3

Create a dressing using the lemon juice, oil, salt and pepper then sprinkle it on top

Step 4

Mix everything together and enjoy
