Matcha shortbread cookies

here’s yet another cookie to add to your christmas cookie jar! i’ve been so excited to finally bake for the holidays and after a busy few weeks finally found some time to try out this recipe. these cookies are perfectly sweet and will literally melt in your mouth

Ingredients

1/4 lb white chocolate

1/4 tsp salt

1 tsp. vanilla extract

14 tbsp unsalted butter

2 cups flour

2 hyphen 3 tbsp matcha

1/2 cup confectioners’ sugar

Instructions

Step 1

Preheat an oven to 325°f and line a baking sheet with parchment paper.

Step 2

In the bowl of an electric mixer fitted with the flat beater, beat together butter and sugar on medium speed until fluffy (about 5 minutes). add the vanilla and beat until incorporated (about 1 min.)

Step 3

In a separate bowl, whisk together flour, matcha and salt until well blended. sift the flour mixture over the butter mixture and beat on low speed until the flour is completely incorporated (about 2 min.)

Step 4

Transfer the dough to a non-stick surface and shape it into a flattened disk before rolling it out.

Step 5

Cut out gingerbread men (or whatever shape you like), and place on the prepared baking sheet, spacing the cookies about 2 inches apart.

Step 6

Bake until the cookies are set, about 15 minutes. let the cookies cool completely.

Step 7

Microwave white chocolate chips using the melt chocolate setting (or melt over stove), then scoop the chocolate into a piping bag.

Step 8

Decorate your cookies and enjoy!
