Brie prosciutto sandwiches

these brie prosciutto sandwiches inspired by none other than THE @halfbakedharvest are perfect the summer sandwich, i seriously cannot get enough (i’ve literally made them three times within the past week and a half)

Ingredients

2 sliced roasted red peppers

2 tbsp chopped fresh basil

1 tbsp fig jam

2 cups arugula

1 tbsp chopped fresh thyme

2 diced garlic cloves

1 wheel of brie sliced

juice of 1 lemon

6 oz. spicy chorizo

ciabatta baguette

salt and pepper

6 oz. prosciutto

1/3 cup extra virgin olive oil

3 tbsp balsamic vinegar

Instructions

Step 1

To make the dressing, combine all ingredients and whisk until smooth

Step 2

Slice the baguette in half and drizzle both cut sides of bread with vinaigrette. then, layer on the red peppers, assorted meats and arugula on one side. on the other half of the bread evenly distribute the brie. place the brie side on top of the other half and gently push down on the sandwich.

Step 3

You can slice the sandwich and serve or wrap the sandwich tightly and place in the fridge for up to 1 day. before serving, cut up 6-8 sandwiches
