Creamy zucchini pasta

i’ve been excited to try out this recipe from @themodernproper all week and it is safe to say that it was well worth the wait. so flavorful and packed with veggies

Ingredients

1 tbsp minced garlic

1 cup heavy cream

1 cup sliced small shallots

1 tsp black pepper

1 tsp kosher salt

1 lb pasta of choice

½ cup pasta water

20 fresh basil leaves

3 cups diced zucchini

¼ cup olive oil

¾ cup parmesan cheese

Instructions

Step 1

In a medium sized saucepan heat olive oil over medium heat, then add zucchini and shallots, cook until softened (about 8-10 mins.)

Step 2

Add garlic and cook for another minute

Step 3

Add heavy cream, basil, salt and pepper

Step 4

Bring to a gentle simmer and allow to cook for 5 mins.

Step 5

While the sauce is simmering, cook the pasta (when draining make sure to keep some pasta water for sauce)

Step 6

Add pasta water to sauce. remove sauce from heat then transfer to a high speed blender. blend sauce until smooth.

Step 7

Toss until pasta and sauce together, and serve topped with more parmesan and freshly ground pepper, and basil leaves
