Silken Tofu Spinach Pasta

Welcome to Episode 3 of Under 30 minute dinners (with hidden protein and a hidden veggie, can it get much better?!) I love experimenting with different flavors and textures and this was my first time using silken tofu- it did not disappoint!! It added a creaminess to this pasta sauce and the spinach brightened the dish (and you can’t even taste it). This is easily gluten free if desired by using a GF pasta!

Ingredients

2 garlic cloves

1/4 cup cashews

1/3 cup hemp seeds

6 oz bag of spinach

9 oz silken tofu

pasta of choice 3 hyphen 4 servings worth

salt pepper

1 tbsp nutritional yeast

1/2 cup pasta water

Instructions

Step 1

-boil water and prepare your pasta (make sure to save about 1/2 cup of pasta water for later).

Step 2

-cook down your spinach in a sautee pan for 3-4 minutes then add to a blender with the rest of the ingredients.

Step 3

-blend until smooth, takes a few minutes, adding 1 tbsp of pasta water at a time. once fully smooth, pour over the cooked pasta and enjoy!
