Sneaky Spinach Pesto

I love this zesty basil and spinach pesto! You can’t even taste the spinach in it but you know you’re getting all of the nutrients from it! I call that a win win. I use this pesto on top of pastas, to dress up veggies, as a spread on sandwiches and toast, and of course on pizza! Highly highly recommend trying this recipe out! ENJOY!

Ingredients

⅓ ⅔ cups water add more if you want it to be a bit runnier i added roughly ⅔ cups

1 tbsp olive oil i try not to include much oil in my recipes so you can always sub for more water

2 cups packed spinach trust me you can’t even taste it

3 large cloves garlic

sea salt to taste ¼ ½ tsp

3 tbsp walnuts can sub for pine nuts or sunflower seeds

3 hyphen 4 tbsp nutritional yeast

2 cups packed fresh basil large stems removed

2 hyphen 3 tbsp lemon juice i used ¾ of a large lemon because i like it really zesty

Instructions

Step 1

-add all ingredients to a blender or food processor and blend

Step 2

-taste and add more nutritional yeast for nuttiness, lemon juice for zest and freshness, garlic for more zing, and water to thin more if desired

Step 3

-enjoy on top of pastas, pizzas, sandwiches, veggies, and more!
