I’m a sucker for banana bread! In the morning, as a mid day snack, for dessert, you really can’t go wrong! I’ve been playing around with a few vegan recipes and have landed on this beauty. The key, super ripe bananas! If you want to make it gluten-free sub out the flours for oat flour and almond flour.

Ingredients

1 tbsp apple cider vinegar

optional chocolate chips 1 extra banana for the top

1 tsp pure vanilla extract

1/2 cup pure maple syrup

1/2 cup white flour can do all wheat or all white if preferred can also sub all for oat flour

2 hyphen 3 tbsp almond butter

1 cup whole wheat flour

1/2 tsp sea salt

3/4 tsp baking powder

2 tbsp ground flax seeds

2 tsp cinnamon

1 tsp baking soda

1/3 cup almond milk

4 mashed bananas suppppper ripe

Instructions

Step 1

-preheat the oven to 350f

Step 2

-combine milk and apple cider vinegar and let it sit for 2 minutes. meanwhile, mash your bananas and combine with all other wet ingredients.

Step 3

-add your milk mixture and ground flax seeds then mix. add your dry ingredients and mix until combined. add your chocolate chips then pour into a parchment paper/greased bread pan. slice a banana and put on top for an additional flair!

Step 4

-bake for 45-55 minutes then let it cool for 30 minutes before enjoying!
