This is the perfect summer recipe ! You can meal prep this + make it for a family gathering + or bring to your next beach day

Ingredients

1 can black beans rinsed

1 can sweet corn rinsed

mango

2 jalapeños remove membranes dice

1/2 a red onion diced

1 yellow bell pepper diced

1 red bell pepper diced

avocado

1 can blackeyed peas rinsed

3 tbsp maple syrup

1 cucumber peeled chopped

1 can pinto beans rinsed

1/2 cup evoo

juice of 3 limes

1/4 cup white wine vinegar

1 orange bell pepper diced

salt pepper to taste

1 can sliced black olives

1 green bell pepper diced

zest of 1 lime

3 tbsp taco seasoning

Instructions

Step 1

Prep your veggies, drain + rinse your canned goods & pour into a large bowl.

Step 2

Whisk together all the dressing ingredients and add into the bowl.

Step 3

Stir until combined!

Step 4

I wouldn’t add the mango + avocado until you’re ready to eat it! this makes a huge batch and the avocado will go bad if you add it in and then store in the fridge so just add it as you eat it ☺️

Step 5

Serve with tortilla chips or on top of a bed of leafy greens with some crushed tortilla chips for a vibrant taco salad !
