My nieces stayed with us this past week and it was so much fun incorporating my husband + I’s plant-based diet with one of our nieces diet who has celiac disease + our other niece who just loves all food. Sunday morning we baked these delicious blueberry chocolate chip muffins that everyone could enjoy!

Ingredients

1/3 cup mini chocolate chips

1/3 cup evoo

2/3 cup date sugar

1 3/4 cup gluten free flour

1 cup unsweetened soy milk

1/4 tsp salt

2 tsp baking powder

1 tsp vanilla extract

1/3 cup frozen blueberries

Instructions

Step 1

Preheat oven to 350 degrees f. to a large bowl combine the flour, baking powder and salt and whisk to combine.

Step 2

To a separate bowl add the milk, evoo, vanilla extract, and date sugar and whisk until well combined. pour the wet ingredients over the dry ingredients and stir to combine. you may need to add a few extra tbsp of soy milk if the batter seems a little thick/dry.

Step 3

Fold in the chocolate chips + blueberries and scoop into a muffin pan.
