Scrumptious Thai Green Curry

Bursting with flavor + loaded with veggies - this curry is a quick & simple dish to whip up for a week night dinner on those busy days ⚡️

Ingredients

1 4oz can green curry paste

1 tbsp avocado oil

1 hyphen 2 packets of brown rice noodles

1/2 white onion diced

1 zucchini chopped

4 garlic cloves minced

1/2 lime juiced

1 can lite coconut milk

1 tbsp fresh ginger grated

1/2 can bamboo shoots about 4oz

1 red bell pepper thinly sliced

2 carrots chopped

roasted peanuts for topping

1 1/2 cups veggie broth

Instructions

Step 1

Prepare the onion, garlic, ginger, and all the veggies.

Step 2

To a pot over medium heat add the avocado oil. once hot, add in the onion, garlic, and ginger. cook for about 5 minutes.

Step 3

Add in the green curry paste and mix well. you may need to add a splash of water to keep from burning.

Step 4

Add in the chopped veggies and stir to coat. cook for 5-8 minutes until the veggies start to soften.

Step 5

Add in the veggie broth and coconut milk. stir and bring to a boil. reduce to a simmer and cover. let simmer for 30 min. if you are adding in the noodles, add in after 20 min and cover and let cook for the remainder 10 min.

Step 6

Once the noodles are cooked turn off the heat and add in the lime juice.
