easyThis is the only dessert I need in my life // a chocolatey date crust with a peanut butter cashew cream & topped with a chocolate peanut butter swirl … it doesn’t get much better than this !!
Ingredients
½ cup peanut butter
3 tbsp water
1 cup water
1 tsp vanilla extract
1 ½ cups medjool dates pitted
¼ cup flaxseed meal
2 cups raw almonds
2 cups cashews soaked
¼ tsp sea salt
¼ cup pure maple syrup
Instructions
Step 1
Soak the cashews in boiling water for at least 30min before making the cashew cream.
Step 2
Line and 8x8 in pan with parchment paper.
Step 3
To a food processor combine all the ingredients for the crust except for the water and pulse until the almonds are finely chopped. add in the water and pulse until it is well combined.
Step 4
Pour the crust mixture into the pan and evenly press out across the pan.
Step 5
To make the cashew cream, combine all the ingredients to a high speed blender and blend until smooth.
Step 6
Pour the cashew cream over the crust and evenly spread out. next take a spoon and drop little spoonfuls of melted chocolate and peanut butter over the top. take a toothpick and swirl them together.
Step 7
Place in the freezer over night and then take out + cut into squares.
Step 8
Store in the freezer. let thaw for about 10 minutes before enjoying.
