easyThe sun is shinning, the kids are on summer break, and it is the perfect time to break out your grill! If you’re like me, you like to snack while you make dinner, so I like to enjoy a fresh fruit skewer while I wait for the others to cook
Ingredients
tempeh
corn
2 tbsp avocado oil
bell peppers
1 ½ tbsp tamari
½ tbsp sweet chili sauce
onion
zucchini
⅔ cup hawaiian bbq sauce
tofu
Instructions
Step 1
Make the marinade by combining all the ingredients into a jar and shake well to combine.
Step 2
A few hours before you are ready to grill, prepare the tofu and/or tempeh. cut the tofu and tempeh into blocks and place in a large container with the marinade. give it a good shake and place in the fridge for a few hours, or overnight.
Step 3
Chop all the veggies into large pieces, so they stay on the skewers.
Step 4
Assemble the skewers! you can honestly use any veggies that you like for these! i like to make sure i have a good variety on each skewer. cook on the grill until everything is lightly charred to your liking!
Step 5
Serve the veggie + plant-protein skewers with a bowl of brown rice + a little extra marinade to drizzle on top.
