VEGAN CACIO E PEPE

I’ve been dreaming of a trip to Rome for as long as I can remember… I’m still dreaming about it but who says I can’t bring the cuisine to me?

Ingredients

1/2 hyphen 1 tablespoon whole black peppercorns

¼ cup lemon juice

⅓ cup nutritional yeast

¼ tsp sea salt

1 tsp miso paste

1 cup pasta water

fresh basil cracked pepper

16oz pasta of choice

¾ 1 cup fresh water

1 cup raw cashews soaked for at least 2 hours

Instructions

Step 1

Soak cashews for at least 2 hours before beginning.

Step 2

Bring a pot of water to a boil and cook the pasta according to package directions.

Step 3

While the pasta is cooking make the sauce. drain the cashews and add to a high speed blender along with the remaining ingredients (except for the pasta water). blend until creamy. start with less water and add more as needed.

Step 4

Reserve some of the pasta water and then drain the rest + place the pasta back in the pot. pour the sauce + 1 cup of reserved pasta water and mix well to combine.

Step 5

Serve with some fresh basil + cracked pepper and voila !
