easyThis cutie is the perfect size and aesthetic to bring to your picnics this spring, and you BET it’s going to be a crowd fav I built on a traditional Italian recipe so that involves raw eggs. In the UK, the red lion raw eggs are safe, but please double check whereever else you’re at that they are!! If not, just pasteurise them beforehand
Ingredients
200g mascarpone
20g sugar
30ml double cream
cocoa powder for dusting
1 large egg
10g condensed milk
2 cups coffee
10 lady fingers approx
Instructions
Step 1
Whip up the egg white into stiff peaks
Step 2
Whip the egg yolk with the sugar until it is light, fluffy, and forms ribbons when dripping down
Step 3
Whip up the double cream with the condensed milk until medium peaks
Step 4
Whisk the mascarpone until soft and smooth
Step 5
Fold the mascarpone into the egg yolk mixture, followed by the heavy cream, and last the egg whites
Step 6
Layer the lady fingers (dipped in coffee for 2 secs) with the cream and dust with cocoa last!
