Matcha strawberry & nutella crepe rolls

If you like crepe cakes, then you’ll have to try these rolls. They’re everything you love about crepe cakes, but less crepe, and more filling. Combined with your favourite fruit, it’s like little pockets of flavour that explode in your mouth when you bite into them! Because they’re 90% filling, I chose to balance the nutella and cream with their fruit best friend for something to cut away the creaminess.

Ingredients

100g milk

5g melted unsalted butter

27g plain flour

nutella as needed

3g corn starch

20g condensed milk

strawberries as needed

1/4tsp baking powder

6g matcha powder

10g sugar

1 medium egg

150g double cream

Instructions

Step 1

Heat the milk, sugar and butter up slowly together until the sugar is melted. then take it off the heat.

Step 2

Once cooled until mildly warm, beat in the egg

Step 3

Sift in the dry ingredients and combine

Step 4

Pass the whole mixture through a sieve once or twice until no lumps are present

Step 5

Rest the mixture in the fridge for at least 30 minutes

Step 6

Cook the crepes and leave to cool

Step 7

Whip up the cream and condensed milk

Step 8

Assemble the rolls!
