easyIn honour of @subtleasian.baking turning 3, I baked it a birthday cake inspired by everyone’s favourite milk tea!! I love tres leches cakes, and the added tea fragrance ( i used my fav earl grey) and subtle bitterness that balances with the sweet creamy flavours just adds that subtle asian touch that I think brings it to another level
Ingredients
30g milk
100g double cream
50g sugar
95g condensed milk
splash of vanilla
pinch of salt
10g condensed milk
20g milk
32g all purpose flour
2 medium eggs yolks and whites separated
85g evaporated milk
cinnamon powder sprinkle on top
1/2 tsp baking powder
Instructions
Step 1
Whip the egg whites up to medium stiff peaks, while adding in 3/4ths of the sugar throughout in 3 parts
Step 2
Whip the egg yolks with the rest of the sugar until pale, fluffy, and ribbony
Step 3
Gently fold in the rest of the sponge ingredients into the yolk mixture
Step 4
Fold in the egg white meringue, in 3 parts
Step 5
Bake at 170c for 25 minutes
Step 6
Once cooled, use a fork to poke holes into the sponge, and pour in the combined milk soak mixture
Step 7
Optionally whip up the cream frosting, and spread over, before sprinkling on the cinnamon
Step 8
Feel free to add fruits (berries tend to go really well!)
