These stuffed bell peppers incorporate the black bean recipe I shared from an earlier post! They come together super easily - just mix everything in a bowl, stuff the peppers, and place them in the oven! Top with your favorite toppings are you are ready to dig in

Ingredients

2 cups mexican black beans quinoa

4 bell peppers cut in half and tops seeds removed

2 tbsp nutritional yeast

1 cup brown rice

¼ cup salsa of choice

avocado for serving

fresh lime juice

Instructions

Step 1

Make the mexican black beans + quinoa and cook the rice according to package instructions.

Step 2

Preheat the oven to 350 degrees f. i like to char the outsides of the bell peppers before i stuff them, but this is optional! place the bell peppers in a 9x14in baking dish.

Step 3

To a large bowl, mix the beans, rice, nutritional yeast and salsa (i just eyeballed the amounts, it really depends on how many bell peppers you make and how stuffed you want them). there is no perfect amount, so just have fun and do what looks good to you!

Step 4

Take the mixture and stuff the bell peppers. cover the dish with foil paper and bake for 20 minutes. remove the foil and bake for 10-15 more minutes. until the bell peppers have softened.

Step 5

Remove from the oven and top with some fresh lime juice, salsa and avocado!
