Chicken enchiladas sour cream sauce & black beans 🇲🇽

3 cup sour cream

1 onion

rotisserie chicken

cheese

tortilla

1 jalapeño

Step 1

Break your rotisserie or left over chicken into small pieces

Step 2

Dice 1 onion and jalapeno into small pieces

Step 3

Add the chicken, onion, jalapeno and cheese into a bowl. add 1 cup of sour cream and mix

Step 4

Get tortill and add the mix and roll

Step 5

In a pot, add 2 cups of sour cream and wait till its runny

Step 6

In a baking tray add your runny sour cream on top, top with rolled tortilla and then add some more sour cream. top with cheese and bake in the oven at 180 for 20 min and broil for 5 mins in the end
