Such a simple, delicious and flavorful breakfast. I love making it for brunch mostly because it keeps me full till night time. The best thing about this dish is you only need one pan to make it! Chop all ingredients, chuck them in the pan and enjoy !!! I usually eat it straight out of the pan too, less washing!!! You can add any other veggies and proteins you sant, I’ve made it with mushrooms and sausage before and it was just as nice

Ingredients

1 onion

feta cheese

potato

salt

chilli

pepper

tomato

garlic

coriander

bacon

Instructions

Step 1

Peel and cut potato into bite size. add into boiling water

Step 2

Dice 1 onion, garlic, chilli, bacon, coriander, and tomato into small pieces

Step 3

Add olive oil to a pan and add all the ingredients

Step 4

Add salt and pepper. make holds and add eggs. cover and cook for 5 minutes

Step 5

Top with diced tomato, coriander and feta cheese
