One of my all time favorite dishes. The mushroom and parmesan cheese really go well together. It is a wonderful dish if you want a vegetarian meal that is very delicious and filling. I used @bionaorganic risotto rice mix that gave it a beautiful dark purple color.

Ingredients

risotto rice mix

butter

red onions

olive oil

brown mushroom

Instructions

Step 1

Chop the mushrooms nice and thin and another batch of mushrooms into 4s. dice red onions and garlic

Step 2

Add butter and olive oil to a pan

Step 3

Add the larger mushrooms and season with salt and garlic

Step 4

In the same pan, add more mushrooms with butter, red onions and garlic.

Step 5

In the same pan add risotto rice mix and toast lightly

Step 6

Add the mushroom stock and thyme

Step 7

Add more stock and the remainder mushrooms.

Step 8

Taste for seasoning and add parmesan cheese
