mediumI don’t like tomatoes, but I love this recipe! It’s so fresh from the basil and flavorful from the roasted garlic. If you have a friend that also doesn’t love tomatoes, share this recipe with them and see if they like it!!
Ingredients
salt both fine and sea salt flakes
5 cloves of garlic
1 tbsp balsamic vinegar
1 hyphen 1 ½ cups of rinsed basil chopped
2 large tomatoes
bread i used farmers market garlic infused bread
2 tbsp olive oil oil for pan frying bread
Instructions
Step 1
-chop tomatoes finely and put in a bowl with some salt). let sit for minimum of 20 minutes (2 hours max). this helps drain excess water from the tomato
Step 2
-finely chop garlic and put it in a pan with a bit of oil (.5 tbsp) and cook for 3-5 minutes until lightly browned, not fully browned.
Step 3
-in a heated pan, put some olive oil in and move your bread around the pan coating both sides with a bit of oil. pan fry until the bread is crispy on both sides.
Step 4
-drain the tomatoes and put in a bowl with the chopped basil, remainder of olive oil (1.5 tbsp), garlic, balsamic vinegar.
Step 5
-top the pan fried bread with the tomato mixture and add sea salt flakes to the top. enjoy!
