I love making this recipe when I have friends coming over! It is super easy, delicious and very quick! It took me 1 hour to finish the whole meal WHILE filming. Whenever i crave Mexican i like to have it with friends and family, I dont know what’s the science behind it but it always tastes better with people 😍

Ingredients

onion

salt

cayenne pepper

olive oil

coriander

lettuce

chipotle seasoning

chicken thighs

long grain rice

tomatoes

pepper

black beans

Instructions

Step 1

Score the chicken thighs and season with salt, pepper, chipotle seasoning, cayenne pepper and olive oil. grill uncovered at 180 degrees for 40 minutes and broil for an additional 10 minutes

Step 2

Add long grain rice in a pot and add water with one chicken stock cube.

Step 3

Chop and dice an onion in half and save the other half. chop chillis but this is optional to the recipe.

Step 4

Add the onion, and green chillis and garlic into the pot with black beans and let it reduce

Step 5

Dice some tomatoes nice and small along with some lettuce, coriander add it to the rice.

Step 6

Start building your plate with all the different ingredients
