Lamb shanks and veggies roast

One of the easiest dishes to make because it needs nothing but patience ! I love eating it with bread or rice and also a nice simple salad on the side. Its an extremely flavorful and hearty dish. I like to make it with the same cut of lamb (lamb shanks) so no one fights over the better pieces

Ingredients

pepper

tomato paste

garlic

stock

onion

potato

carrots

rosemary

salt

Instructions

Step 1

Chop the potatoes in half and start peeling the carrots to take the skin off and cut into small pieces.

Step 2

Chop and dice 1 onion

Step 3

In a baking tray add the potatoes, onion and carrots. add garlic and lamb shanks and season with salt, pepper, dry rosemary, tomato paste and either stock or water.

Step 4

Cover and bake for 1 and half hours at 150 degrees. cook for additional 30 mins uncovered.

Step 5

Drizzle with olive oil on a plate and enjoy
