this is one of those desserts i’ve had on my to bake list all summer. i have been loving blueberries lately and picked up some super sweet ones from the farmers market this week and figured this was a perfect dessert to try out, especially because the weather has cooled off a little bit lately and i was actually willing to turn on my oven for the first time in weeks. i swear this was the most refreshing perfect dessert i have tried yet and the recipe is seriously fool proof. i made the filling and crust from scratch, but if your not feeling like making homemade crust this recipe would also be amazing with puff pastry.

Ingredients

1/8 tsp salt

2 eggs

2 chamomile tea bags

1/4 cup honey

1 tbsp cornstarch

2 tsp lemon juice

2 cups fresh blueberries

1 tsp vanilla extract

1 1/4 cup flour

french vanilla ice cream

1/4 cup sugar

1 stick unsaltened butter soften

course sugar

Instructions

Step 1

Preheat the oven to 375f

Step 2

Bring the honey to a low boil in a small saucepan, simmer 1 minute and remove from the heat. add the tea bags, cover and steep for 10 mins. remove the tea bags.

Step 3

In a medium bowl, combine the blueberries, chamomile honey, cornstarch, lemon juice, and vanilla.

Step 4

To make the crust combine eggs and butter in a bowl. next mix salt, sugar and flour in a separate bowl. combine wet and dry ingredients together and mic until there is a doughy consistency.

Step 5

Roll out the dough on a sheet of parchment paper and place on a baking sheet. place the blueberry mixture of the dough and fold over edges. brush edges with egg wash then sprinkle course sugar on the crust. bake for 25-30 min.

Step 6

Let cool slightly and serve with ice cream. enjoy
