Spicy Asian Cucumber Salad

The absolute perfect side dish and would be so amazing on top of a poke bowl (which is why I jarred up a little and am saving it for exactly that later in the week). It’s also just such a good refreshing, healthy snack that i don’t think i will ever get over.

Ingredients

1 tbsp coconut sugar

1 tbsp sriracha

2 cloves garlic

2 tbsp green onion

6 persian cucumbers

1 tsp sesame seeds

1 tbp rice vinegar

1 tbsp chili onion crunch

1 tbsp soy sauce

2 tsp salt

Instructions

Step 1

Slice up you cucumbers however you like. i used a peeler to make them more noodle like but just cutting them normally is perfect too

Step 2

Add the sliced cucumbers, garlic, rice vinegar, soy sauce, chili crunch, sugar, salt and sriracha to a bowl and coat the cucumbers in the marinade

Step 3

Place in a jar or bowl over night and eat with fresh green onion and sesame seeds on top
