easyUp your game this weekend with homemade pasta! It’s easy, tastes super good, and you don’t need to have a pasta machine 🍝 I know, this is a baking account but I just couldn’t help sharing my favorite recipe of my favorite food ☺️
Ingredients
a pinch of salt
1 egg for each 100g of flour
100g 2/4 cup or 4oz 00 flour
Instructions
Step 1
Make a nest with the flour on a clean surface and add the ingredients to the center.
Step 2
Gently break up the eggs with a fork, then mix and knead the dough with your hands.
Step 3
Cover in plastic wrap and let sit at room temperature for 30 minutes.
Step 4
Slice dough into pieces the size of a tennis ball.
Step 5
If you don’t have a pasta machine: dust your working surface in flour. make one piece of dough into a flat oval disk. roll with a rolling pin until 0.05in (1.5mm) thick. you’ll know when it’s ready when you can start seeing the working surface through the dough. repeat with remaining sheets and cut into shapes you like using a knife.
Step 6
If you have a pasta machine; flatten one piece of dough into an oval disk. run the dough through the pasta machine at the widest setting.
Step 7
Fold both short ends in to meet in the center and run the dough through the pasta maker on each setting until the narrowest or second narrowest.
Step 8
Dust your working surface in flour and lay the pasta sheet on it. sprinkle more flour on the sheet so that every side is covered in flour. slice the sheet into 2.
Step 9
Repeat with remaining dough.
Step 10
Run the pasta sheets through the pasta cutter attachment in the shape you want. repeat with remaining dough.
Step 11
Cook the pasta in a pot of salted boiling water for 1 to 2 minutes.
Step 12
Enjoy with your favorite sauce. i recommend fresh cherry tomatoes, sautéed in a pan with olive oil and garlic with some fresh basil leaves and tons of parmigiano reggiano.
