i’m a pizza girl through and through - so healthy breakfast za is quite literally the meal of my dreams. This protein rich, delishhh breakfast is so good I actually gasped when I took my first bite. this is also perfect if you have a busy morning - you can simply flip your oven on, assemble, and get ready for your day while it cooks through

Ingredients

3 eggs

1 tbsp cilantro

1/3 cup spinach finely chopped

1 tbsp chopped green onion

1/4 cup of your favorite salsa i used tjs salsa autentica

avocado oil

salt and pepper

1 large flour tortilla

handful of cherry tomatoes

1/4 cup shredded cheese

pickled onions

traderjoes italian bomba

Instructions

Step 1

Preheat oven to 375f

Step 2

Lightly coat your tortilla with avocado oil (the spray works great here!) using medium low heat, assemble your pizza in a oven-safe pan by spreading salsa evenly over the tortilla and cracking eggs on top.

Step 3

Top with s&p, green onion, tomatoes, cilantro, spinach, and cheese. bake for about 10 minutes (or until eggs are fully cooked).

Step 4

Remove from oven, add toppings, and enjoy!
