Spicy lasagna soup

we love a little one pot lazy girl meal, and this soup just might be the best thing i’ve made all month! it uses all the same ingredients as lasagna and tastes just like the real deal. this was the COZIEST meal ever, and i will absolutely be making it over and over until i don’t have to wear a jacket outside

Ingredients

2 tbsp olive oil

1 tsp dried oregano

2 tbsp tomato paste

1 small sweet onion

1 tsp dried basil

1/2 tsp dried thyme

1 cup cherry tomatoes halved

2/3 cup half and half

1/2 cup ricotta

16 oz hot italian sausage

2 garlic cloves minced

1 tsp pepper

4 cups chicken broth

1 tsp salt

8 oz lasagna sheets broken into smaller pieces

1/2 tsp dried rosemary

1/2 tap red pepper flakes

1 28 oz can crushed tomatoes

Instructions

Step 1

In a dutch oven, heat the olive oil on medium low and add in the onion and garlic, cook until softened.

Step 2

Add in the sausage and all the spices, making sure to everything up evenly (i like to use a potato masher)

Step 3

When the sausage is cooked through, stir in the cherry tomatoes and tomato paste. mix and let it cooke for a few minutes.

Step 4

Add in the crushed tomatoes and chicken pot, then let the soup come to a simmer.

Step 5

Add in the lasagna noodles, stir everything, cover, and let simmer for 20 minutes.

Step 6

Stir in the half and half and ricotta and mix until everything is incorporated.

Step 7

Serve with more ricotta and red pepper flakes. enjoy!
