Celebrate Thanksgiving with this delicious Pumpkin Pecan Bread Pudding that’s a perfect fit for the season. It tastes even better as I used Eggland’s Best eggs – they stay fresher longer, adding a rich taste to the final creation. This tasty treat, filled with pumpkin goodness, crunchy pecans, and the goodness of Eggland’s Best eggs, is a must-have for any Thanksgiving feast.

Ingredients

28 gms candied pecans

1/4 teaspoon nutmeg

5 brioche rolls

1/2 teaspoon vanilla

42 gms chopped pecans

1/4 teaspoon cinnamon

2 eggs

1/4 cup powdered sugar

2 tablespoons pumpkin puree

1 cup full fat milk

2 tablespoons powdered sugar to sprinkle

1/2 cup half and half

2 tablespoons caramel sauce to drizzle

Instructions

Step 1

Mix milk, half and half, eggs, vanilla, powdered sugar, cinnamon, nutmeg, chopped pecans nicely until no lumps are left.

Step 2

Pour this mixture over roughly cut brioche bread.

Step 3

Bake at 350 f for 40-45 mins.

Step 4

Sprinkle powdered sugar, drizzle some caramel, and sprinkle some candied pecans on top and enjoy your pumpkin bread pudding!
