This mango, cucumber, red pepper, and peanut salad is a delightful blend of sweet, crunchy, and savory flavors. The ripe mango adds a burst of tropical sweetness, while the crisp cucumber and vibrant red pepper provide a refreshing crunch. Topped with roasted peanuts, it offers a satisfying nutty contrast and a touch of protein.

Ingredients

1/2 tsp salt to taste

1 teaspoon honey

1 tablespoon crushed peanuts for garnish

2 tablespoons soy sauce

1 tsp red pepper flakes to taste

1 cup cilantro for garnish

1 teaspoons finely chopped ginger

1 small red pepper thinly sliced

2 small cucumber cut in spirals

1 mango cut in spirals

2 teaspoons rice vinegar

Instructions

Step 1

Combine cucumbers, mango and red pepper in a bowl.

Step 2

Whisk together soy sauce, rice vinegar, honey, ginger, salt, red pepper flakes and pour over cucumber, mango and red pepper.

Step 3

Mix everything well, garnish with cilantro and crushed peanuts and your mango cucumber salad is ready.
