Ingredients
1 medium sized cauliflower
1 tablespoons vegetable oil
1 cup of cilantro leaves for garnish
1 teaspoon cumin powder
1 tsp red chili powder
1 teaspoon turmeric powder
1 teaspoon dry fenugreek leaves
1 teaspoon cumin
2 medium sized potatoes
salt
1/2 cup peas
Instructions
Step 1
Heat the vegetable oil in a large pan or skillet over medium heat. add the cumin seeds and let them sizzle for a few seconds.
Step 2
Add the finely chopped onions and sauté until they become translucent, about 2-3 minutes.
Step 3
Add the cauliflower florets, peas and diced potatoes to the pan. now, add the turmeric powder, cumin powder, salt, dry fenugreek leaves and red chili powder. mix well and cook for 2-3 minutes until the spices are well incorporated.
Step 4
Cover the pan and let the gobi aloo simmer for about 10-15 minutes, or until the cauliflower and potatoes are tender. stir occasionally to prevent sticking.
Step 5
Once the vegetables are cooked, garnish with fresh cilantro leaves.
Step 6
Serve hot with roti, naan, or steamed rice. you can also squeeze some fresh lemon juice over the gobi aloo for a burst of citrus flavor.
