easyThis recipe came from a night where I really didn’t feel like cooking and I had some veggies in the fridge that needed to be used which is the perfect time to make a stir fry. It ended up being so good that I had to make it again and share it with you all
Ingredients
1 tbsp minced ginger
450g ground chicken or turkey
2 carrots ribboned using a peeler or grated
2 tbsp soy sauce
2 hyphen 3 cups of mushrooms sliced
pinch of chilli flakes optional
2 green onions thinly sliced
1/2 tsp garlic powder
1 bell pepper thinly sliced
3 tbsp hoisin sauce
Instructions
Step 1
Heat up a pan over medium heat with a little oil and add ground chicken then use the back of the spatula to break it up.
Step 2
Cook for 5 minutes until browned then add in the bell pepper and mushrooms, continue to cook for another 5-7 minutes, adding the ginger half way then add the carrots and half the green onion.
Step 3
Pour over the sauce and toss to combine, cooking for another 2-3 minutes to allow the sauce to thicken.
Step 4
Serve over regular or cauliflower rice and top with the remaining green onion.
