easyI wanted to post another budget friendly dinner recipe with you all and this penne pasta was so simple but super delicious so I thought I would share! I usually love making my own sauce when I’m having pasta but let’s be real, sometimes you just can’t be bothered and you need something low effort. This recipe can also easily be made vegan by omitting the sausage as well.
Ingredients
1 tsp chilli flakes
1 hyphen 2 bell peppers thinly sliced
1/2 hyphen 1 cup reserved pasta water
2 garlic cloves finely chopped
2 medium zucchini sliced
about 3/4 jar of marinara or amatriciana sauce
2 spicy sausage casing removed
half an onion thinly sliced
1 tbsp olive oil
1 package of penne
Instructions
Step 1
In a large pan with olive oil over medium heat, cook the sausage and break into smaller pieces then remove from the pan and set aside.
Step 2
Add the onion and cook for 2 minutes then add the zucchini and peppers and cook for another 5-7 minutes.
Step 3
Meanwhile bring a pot of water with salt to a boil and cook your pasta according to the package instruction. make sure to save about 1 cup of the pasta water to use later on.
Step 4
Next add the garlic and chilli flakes to the veggies and continue to cook for another minute before adding back the sausage.
Step 5
Pour in the tomato sauce and turn down the heat to medium low.
Step 6
Add the pasta to the pan and stir to combine, adding a little pasta water as need to thin the sauce slightly.
Step 7
Once combined, serve it up and enjoy
