mediumThese Chicken Rice Paper Rolls are the perfect healthy work/school friendly lunch Lunch is often one of those forgotten meals. We’re all busy people so no one wants to take an hour out of the middle of their day to make a meal. That’s why I love how easy this recipe is! It also travels well in a lunch box so no soggy wraps here
Ingredients
lettuce of your choice
mint or cilantro
shredded chicken
rice paper
radish thinly sliced
cucumber cut into sticks
red cabbage thinly sliced
carrot grated or julienned
Instructions
Step 1
Add some warm water to a plate or baking dish that is large enough to fit the rice paper.
Step 2
Dip the rice paper, one at a time, into the water for a few seconds each side and place the wet rice paper on a clean dish towel.
Step 3
Now add all the fillings, but make sure not to overfill as it will be difficult to roll it up.
Step 4
To roll it into wrap, start by folding the ends in then lift one side and fold it over the filling and roll it up.
Step 5
I like to dip mine in either a peanut or tahini sauce
