The creamiest Cauliflower Mash

This recipe is the perfect healthy side dish and a yummy way to sneak more veggies in your meal! You could fool anyone into enjoying cauliflower with this recipe👀 I also made it dairy free but you can substitute regular dairy products if you prefer.

Ingredients

3 tbsp dairy free cream cheese

1 large head of cauliflower chopped into small pieces

1/4 cup unflavoured plant based milk

1 garlic bulb

salt

Instructions

Step 1

Start by cutting off the top of the garlic bulb, drizzle with olive oil and wrap in aluminum foil.

Step 2

Roast the garlic in the oven at 400°f for 30-40 minutes until the cloves are golden and softened.

Step 3

Meanwhile, add the chopped cauliflower to a pot of boiling salted water and boil for 10-15 minutes until it is fork tender.

Step 4

Transfer the cooked cauliflower to a blender or food processor along with as much garlic as you want (i added about half the bulb), the boursin or cream cheese, plant based milk and a generous amount of salt and pepper then blend until smooth.

Step 5

Transfer to a bowl and garnish with chives before serving!
