Greek Turkey Meatballs

I hadn’t made these in awhile and wow they are even better than I remember🤤 I love serving these with a Greek salad or bowl for the perfect easy weeknight dinner. They’re also great to meal prep for lunch!

Ingredients

2 tsp dried oregano

1/3 feta crumbled

1/3 cup fresh parsley finely chopped

1/3 cup sundried tomatoes i use the ones that come in oil chopped into small pieces

1 tsp salt

1/2 tsp pepper

1/3 cup quick oats or quinoa flakes

450g ground turkey

pinch of red pepper flakes

Instructions

Step 1

Preheat the oven to 375°.

Step 2

Add all the ingredients to a large bowl and mix until it is well combine. i find it is easiest to combine using my hands.

Step 3

Using a small cookie scoop (or spoon) and your hands, roll the mixture into 12-15 meatballs and place on a lined baking sheet.

Step 4

Bake the meatballs for 15-18 minutes, until they are cooked thoroughly.

Step 5

Serve with a salad, bowl or even as an appetizer! enjoy
