Salmon Poke Bowl

This is one of my favourite weeknight dinners. It takes less than 30 minutes to make and you can customize it based on what ingredients you have in your fridge. You can use a variety of veggies but below are my current go to!

Ingredients

rice

cucumber diced

mango diced

1 hyphen 2 tsp sriracha

salmon cut into cubes and seasoned with salt and pepper

coconut aminos or soy sauce

edamame

sesame seeds optional

1/2 tsp rice vinegar

1/2 tsp coconut aminos

red cabbage shredded

carrot shredded

2 tbsp mayo

Instructions

Step 1

Cook your rice according to the instruction in the package and cook the salmon your preferred way. i like to airfry mine for about 8 minutes.

Step 2

Meanwhile, cut up the veggies and whisk together the sriracha mayo.

Step 3

Once the rice and salmon is ready, assemble the bowl with the rice on the bottom and top with the veggies and salmon.

Step 4

Add a drizzle of coconut aminos or soy sauce and the sriracha mayo then top with sesame seeds.
