CREAMY HARISSA BEANS ON TOAST

Deliciously saucy and creamy beans loaded onto crunchy bread.

Ingredients

1 can butter beans

1 tbsp olive oil

3 cloves garlic minced

½ lemon juiced

¼ red onion finely diced

2 tsp harissa spice

¾ cup cream

2 tbsp tomato paste

crusty bread

fresh basil

1 tsp dried oregano

Instructions

Step 1

Saute the onion in olive oil for 5-7 minutes so it starts to become caramelised. add the garlic and tomato paste and cook for another minute.

Step 2

Add the can of beans along with their liquid and use that to deglaze the pan. stir through the harissa, oregano and cream and let simmer for another 5-10 minutes (depending on how much time you have).

Step 3

While the beans are simmering, toast your bread.

Step 4

Stir through the fresh lemon and serve topped with basil.
