Apparently it’s National chocolate chip cookie day?! Here’s my take to have some chocolate chip cookies for breakfast (gluten free and vegan made with oats and spiced with ginger for a kick!) I love making these breakfast cookies at the beginning of the week and having them in the mornings as a quick grab and go breakfast! If you’re a huge ginger fan I recommend trying these out as they are packed with flavor and spices! Be sure to save this recipe as a quick 1 bowl batch breakfast idea!

Ingredients

1/4 cup almond flour oat flour also works

1 tsp vanilla

2 ripe bananas mashed

1/2 cup chocolate chips optional but additive

3/4 hyphen 1 tsp ground ginger

1/4 cup almond butter

3 tbsp maple syrup

1 tbsp chia seeds

2 1/2 tsp cinnamon

1 1/2 cups old fashioned rolled oats

1 tsp baking powder

1 tbsp almond milk or any non dairy milk

1/4 tsp salt

Instructions

Step 1

-preheat oven to 350f

Step 2

-mash your bananas and add all wet ingredients, mix then add all dry ingredients

Step 3

-shape into patties with your hands or using a hearty tablespoonful (they may be a bit sticky but that’s okay!)

Step 4

-cook for 17-20 minutes then enjoy!

Step 5

Storage: they last for 5 days in the fridge or in the freezer for 1 month
