easyThis quick and easy dinner has been on repeat in my house lately. It takes less than 30 minutes to make so it’s the perfect weeknight dinner when you want something quick but healthy. Also, if you haven’t tried making salmon in the air fryer yet then you absolutely need to give it a try. Trust me you will never go back
Ingredients
sprinkle of garlic powder
2 tbsp soy sauce or coconut aminos
2 green onions chopped
2 tbsp rice vinegar
salt
1 1/2 cup shelled edamame
1 tsp maple syrup
1 hyphen 2 tsp sriracha
pinch of chilli flakes
1 hyphen 2 tsp honey
handful of cilantro chopped
1 inch piece of ginger finely grated
2 mini cucumbers diced
pepper
1 tsp sesame oil
2 salmon fillets
Instructions
Step 1
First prepare the salad by combining all the ingredients in a bowl and tossing it so the dressing is fully combined.
Step 2
Set aside and let sit while you cook the salmon.
Step 3
Pat the salmon fillets dry then season with salt, pepper and garlic powder.
Step 4
Next coat the salmon in sriracha and honey using a brush so that it is evenly coated (don’t forget the sides!).
Step 5
Place in the salmon in the air fryer basket and spray with avocado oil then cook on 375° for 8-10 minutes. you may need to reduce the cooking time if the salmon in on the thinner side.
Step 6
Once the salmon is fully cooked add it to a bowl on top of some regular or cauliflower rice then top it with the cucumber edamame salad.
Step 7
Add a sprinkle of sesame seeds then serve and enjoy
