Mango Salsa

This is one of my all time favourite summer recipes that can be served with tortilla chips for a light and refreshing appetizer or added to bowls or tacos for an extra burst of flavour!

Ingredients

1/2 small red onion finely diced

1 large handful cilantro chopped

1/2 a large or 1 small red bell pepper diced

juice of one lime

salt to taste

1 ripe mango diced riper the better

optional 1/2 jalapeño finely diced

Instructions

Step 1

Chop all the ingredients and add to a bowl.

Step 2

Squeeze over the juice of one lime and season with salt. i like to let it sit for 20-30 minutes for maximum flavour but feel free to serve immediately!
