Ingredients
olive oil
2 cm ginger minced
rice optional
3 potatoes
500ml vegetable broth
1 cup of coconut milk
green peas
2 carrots
pepper
1 can of chopped tomatoes
yoghurt
fresh parsley
2 sweet potatoes
salt
4 garlic cloves minced
roti optional
1 red onion
100 dry red lentils
2 tsp yellow curry
1 zucchini
broccolini
Instructions
Step 1
Heat the olive oil add the chopped onions, and sauté for 2-3 minutes until translucent. then add the garlic and ginger sauté for another minute until fragrant. lastly, add the spices, and sauté for a few seconds to unfold.
Step 2
Add your chopped veggies and simmer for about 3 minutes. add your dry lentils, tomatoes and broth. simmer for ~ 20 minutes until all the veggies turn soft. lastly add the coconut milk.
Step 3
Garnish with yoghurt and serve with your choice of carbs.
