Experience pizza perfection with Mini Eggplant Pizzas. Sliced eggplants serve as a savory base, topped with tomato pizza sauce, mini bocconcini, and a sprinkle of freshly grated Parmesan. Drizzle with olive oil, season with salt and pepper, then customize with your favorite toppings—capsicum, salami, and cherry tomatoes for a burst of flavors. 2 eggplants

freshly grated parmesan cheese

pepper

tomato pizza sauce

salt

salami

rocket salad

Instructions

Step 1

Preheat oven to 200 degrees celsius.

Step 2

Place eggplants rounds on a baking sheet. generously salt the slices. brush slices with 2 tablespoons oil and season with black pepper. bake until softened and slightly golden brown, 30 minutes.

Step 3

Remove eggplant slices from the oven and pour about 2 tablespoons of the tomato pizza sauce onto each one. sprinkle mozzarella and parmesan on each eggplant slice and finish with your favorite toppings.

Step 4

Return to oven and bake until cheese is melted, ~5 minutes.

Step 5

Garnish with crushed fresh basil/rocket salad and serve immediately.
