easyI had lots of roast beef left over from Sunday nights roast so decided to make noodles - yum!
Ingredients
left over beef cubed
soy sauce
cucumber for freshness
sugar snap beans
3 egg noodle nests
spring onion
hoisin sauce
soft boiled egg
2 fresh chillis
oyster sauce
Instructions
Step 1
Start by frying off the sugar snaps in a hot pan. meanwhile set the eggs to boil (6/7 minutes until soft boiled - remove and place in ice bath until ready to serve)
Step 2
Begin to boil the egg noodles, following package instructions.
Step 3
Add in the beef to the pan with the sugar snap noodles and begin to heat. once noodles are cooked add to the pan and begin to fry off. you can add in some olive oil at this point to prevent the noodles sticking together.
Step 4
The sauce i made to taste - add in to the noodles, soy sauce, oyster sauce, hoisin sauce, chopped chillis, spring onion (leaving some for topping)
Step 5
Stir fry this together and ensure everything is fully coated and serve in bowls
Step 6
Top with spring onions, sliced cucumber and soft boiled egg
